Reims, France. Selected plots located mainly in Les Riceys.

Varieties

50% Pinot Noir, 25% Chardonnay, 25% Meunier.

Aging

Minimum aging on lees of 24 months and minimum aging after disgorgement of 3 months.

Color

Deep pink. This champagne has an elegant color and a charming character.

Nose

It has an aromatic explosion of blood orange, wild strawberries, black cherries, and blackberry jam, followed by fragrances of licorice and smoky notes.

Palate

The final impression leaves a touch of cinnamon, its freshness is expressed by the slight acidity of the red fruit.

Pairing

Sirloin, red onion tatin, small mashed potatoes with brown butter and veal juice. It also pairs very well with salmon fillet, lemon and cilantro, with red fruit soup with mint leaves or zucchini, grilled eggplants, tomato sauce, and herbs.
