Sommelier Randall Calderón Chacón’s comments: Secondo Marco is a boutique family winery with limited production and great exclusivity. It has been operating for three generations in the heart of Valpolicella Classica. Amarone is the king of red wines in Northeastern Italy. The most prestigious wine of Valpolicella, whose excellence and uniqueness are recognized worldwide. It is obtained mainly from the drying of the grapes (Appassimento technique) which rest in “Fruttaio = ventilated cellars in wooden or plastic trays” for 100/120 days: during this period the components of the berries concentrate, such as sugars and polyphenols. The raisins (already dehydrated) are vinified in winter; a slow and skillful fermentation results in a dry wine with high alcohol content. A long aging in wood perfects its structure and unique personality, making it capable of being preserved and evolving for decades. A great wine that reflects the pedigree of Amarone.
