Origin: D.O. Cava, Vilafranca del Penedès – Spain. Varieties: Xarel.lo 55%, Macabeo 30% and Parellada fifteen%. Elaboration: Classic Method, 24 months. Nose: Scented, reminiscent of fresh fruit but all ripe, toasted, and spicy touches that give it a complex bouquet. Mouth: its entry is penetrating. Advance emphasizing the flavors of the nose notes, very good balance, intensity, and a persistent finish. Optional pairings among others: Ideal for the toast and from the aperitif. Goes very well with sushi, sausages, all kinds of fish, and shellfish such as clams, oysters, shrimp, lobster, prawns, crab, and mussels. the paella, the pasta, and the white meat.
