No-Knead Artisan Bread
Ingredients
3 cups Artisan Bread Flour
1 1/2 cups Warm Water
2 tsp Salt 1/2 tsp Active Dry Yeast or Instant Yeast
In a large bowl, combine bread flour, salt and yeast. Add water and stir until a shaggy bread dough forms. Cover bowl with plastic wrap. Let dough rise at room temperature for 10 hours.
Preheat oven to 450ºF. Place a 4-quart Dutch oven into the preheated oven, without lid, for 30 minutes.
While Dutch oven heats, turn dough onto a well-floured surface and form into a ball with floured hands. Cover dough loosely with plastic and let rest for 30 minutes. With floured hands, place the dough into heated Dutch oven.
Cover Dutch oven with its lid and bake for 30 minutes. Remove cover and bake for 12 minutes more. Remove loaf of baked bread from Dutch oven and cool completely before slicing with a serrated knife.

Teff Flour is a pleasingly light, uniquely flavored, 100% whole grain flour. Ethiopian households have been using teff flour in their baking for ages. A favorite teff dish eaten at almost every Ethiopian meal is a flat, crepe-like bread called Injera.
Whole Grain Teff, an ancient East African cereal grass, is a nutritional powerhouse. It is the smallest grain in the world—about 100 grains of teff are the size of a single kernel of wheat! Compared to other grains, it has a much larger percentage of bran and germ so it's a very good source of dietary fiber, protein, iron, amino acids, vitamin C and calcium. Another teff flour benefit is the calcium content that significantly surpasses that of all other grains.
Due to the small size of the grain, it is almost impossible to grind teff flour in your home mill. We are glad to do the work for you! Now you, too, can enjoy the light, nutty flavor and bountiful nutrition of teff flour in your home. Substitute Teff Flour for about a fourth of the all-purpose flour called for in your favorite baked goods recipe to add an appealing taste and added nutrition. To prepare this easy gluten free pizza dough, just add eggs, warm water and olive oil (a stand mixer can be helpful), then spread the gluten free dough on an oiled pizza pan. The mix contains a yeast packet and creates an authentic crispy crust. The texture and taste of this crust is fantastic! It’s crispy and chewy and has the wonderful yeast flavor of a wheat crust. Try adding a little basil, oregano, garlic, or finely chopped rosemary to the mix.
