Sommelier Randall Calderón Chacón’s comments: Winemaker Xavier Ausàs has a great curriculum in his professional career, including 25 years at the mystical Vega Sicilia winery. In 2015 (first harvest) he ventured with this personal project. It is the result of his personal interpretation of Ribera del Duero; its climate, soils, and vineyards, to the point that he performs parcel vinifications to respect the effect of each of the terrains, cold macerations for fruit extraction, and different temperatures in fermentation to try to respect the uniqueness of each origin. Limited production of 35,000 bottles. Great finesse, balance, and roundness stand out in every sip of this GREAT wine.

Nose: Expressive. Fuses red and black fruits, mainly ripe and intertwined with notes of cedar, tobacco, and a mineral background.

Mouth: Opulent, massive, and expressive, with a long, fresh (balsamic notes) and elegant finish. Highlights a certain “calcic” character that provides minerality.

Pairing: Red meats, oxtail, lamb, suckling lamb, game, and aged cheeses.
