The UNREFINED WHOLE one (“Mascabado”, from the ancient Portuguese word unrefined, rustic) is obtained from the crystallization of the boiled sugar cane with no centrifuge, so the molasses (syrupy juice) stays with the final product as well as all its nutrients, while impurities are taken out thanks to a slower crystallization.
