Originating from southern China (Cantonese and Sichuan traditions), it was developed to balance flavor and wellbeing according to the philosophy of five tastes associated with the five elements (sour–wood, bitter–fire, sweet–earth, pungent/aromatic–metal, salty–water). Since the 19th century it has become popular in lacquered dishes, red stews and home cooking as a balancing “aromatic shortcut.” It has a warm-sweet perfume with a spiced background and a slight citrus tingle. It rounds out sweet-and-sour sauces and adds depth to stir-fries, meats and vegetables without being overly hot. How to use Use ¼–½ tsp per serving (≈ 1 tsp per 500 g). Wake it in oil for 10–15 s or add at the end to preserve the aroma. Ideal for wok stir-fries, marinades (soy + honey/sweetener + vinegar) and oven glazes. 🌱 INGREDIENTS Star anise, cinnamon, clove, Sichuan pepper, fennel seed and fragrant laos, which together create an explosion of exquisite flavors.
