Healthy Moringa Lasagna

Ingredients:
- 12 lasagna noodles
- 2 tbsp olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 lbs fresh tomatoes, diced
- 1 tbsp dried moringa leaves
- 1 tsp Himalayan salt
- 1/2 tsp black pepper or mix it up with lemon pepper
- 1 lb fresh spinach, chopped
- 1 lb ricotta cheese
- 1 egg
- 1/2 cup grated parmesan cheese
- 2 cups shredded mozzarella cheese
- Basil to garnish
Instructions:
- Preheat oven to 375°F. Cook lasagna noodles according to package instructions and set aside.
- Heat olive oil in a large skillet over medium heat. Add diced onion and sauté for 3-4 minutes until softened. Add minced garlic and sauté for another minute.
- Add diced tomatoes, dried moringa leaves, salt, and black pepper to the skillet. Stir to combine and let the mixture simmer for about 10-15 minutes until the tomatoes have broken down and the sauce has thickened.
- In a separate skillet, cook the chopped spinach until wilted. Remove from heat and let cool.
- In a medium bowl, mix together ricotta cheese, egg, and grated parmesan cheese.
- To assemble the lasagna, spread a layer of the tomato sauce in the bottom of a 9×13 inch baking dish. Place a layer of cooked lasagna noodles on top of the sauce, followed by a layer of the spinach, a layer of the ricotta mixture, and a layer of shredded mozzarella cheese. Repeat the layers until all the ingredients are used up, ending with a layer of mozzarella cheese.
- Cover the baking dish with foil and bake in the preheated oven for 30 minutes. Remove the foil and continue baking for another 10-15 minutes until the cheese is melted and golden brown on top
- Let the lasagna cool for a few minutes before slicing, garnishing with basil and serving. Enjoy your healthy and delicious lasagna!
